FLAX EGG
  1. 1 tbsp flaxseed, ground
  2. 2 tbsp water
DRY INGREDIENTS
  1. 1 3/4 cup rolled oats
  2. 3/4 cup gluten free all purpose flour
  3. 3/4 cup unsweetened shredded coconut flakes
  4. 1/2 cup sunflower seeds
  5. 1/4 cup millet
  6. 2 tbsp sesame seeds
  7. 1 tsp cinnamon, ground
  8. 1/2 tsp baking soda
  9. 1/2 cup raisons, or mini chocolate chips
WET INGREDIENTS
  1. 1/3 cup coconut oil
  2. 1/3 cup coconut palm sugar
  3. 1/4 cup maple syrup
  4. 1/4 cup almond butter
  5. 1 tsp vanilla extract
  6. 1 flax egg
Instructions
  1. Start by making "flax egg" by mixing ground flax with 2 tbsp water. Set aside.
  2. Mix all dry ingredients together. Set aside.
  3. Melt coconut oil. Add coconut palm sugar and remaining wet ingredients, including flax egg.
  4. Add wet ingredients to dry ingredients and mix well.
  5. Line 2 baking sheets with parchment paper.
  6. Use an ice cream scoop to spoon out 24 even portions on baking sheets.
  7. Press each cookie firmly together and shape evenly. Bake at 350 for 10-12 minutes.
  8. Let cool on pan.
Notes
  1. Try to use organic ingredients whenever possible.
